Serve this over cornbread (most authentic to the TX panhandle), rice (authentic a little further east than the TX panhandle), or whole wheat pasta (not the least bit authentic, but still, very good.) Add a few jalapenos if you are willing and able.

Recipe Ingredients for Depression-Era Panhandle Red Beans

10 oz pinto beans
22 oz fat free refried beans
1 oz onion
1/2 oz red onion
5 oz bacon
10 c water
3 T chili powder
1 t garlic
1/4 t cumin
1/2 t oregano
2 t salt
1 c tomato sauce

Recipe Directions for Depression-Era Panhandle Red Beans

  1. Soak the beans overnight.

  2. Bring 4 quarts of water to a boil and add beans, minced onion, chopped bacon, and salt. Bring back to a boil and turn the heat down to a slow boil and cover. Cook for 2 hours.

  3. Add water to return the volume to 4 quarts. Add refried beans a little at a time and whisk into the broth. (Dehydrated refried beans are also good)

  4. Add remainder of ingredients and continue at low boil, with lid cocked to allow steam to escape -- 2-3 hours.

  5. Adjust salt to taste and serve! This should be a fairly thin-brothed soup with few of the beans left whole.
