Chewy and tasty banana "muffins", quite dense and very flavorful

Recipe Ingredients for Dense Banana-cran Muffins

3/4 cup all purpose flour
2 tbsp milk
2 tbsp brown sugar
1 egg
1/2 tsp baking powder
1/2 tsp baking soda
1 1/2 bananas
1/4 tsp salt
2 tbsp rum
1/2 cup dried cranberries

Recipe Directions for Dense Banana-cran Muffins

  1. combine baking powder, flour, baking soda, salt (I also added 1/2 tsp each of nutmeg and cinnamon - optional)

  2. soak the dried cranberries in the rum for at least 15minutes

  3. Mash the bananas and add the egg and brown sugar, mixing until well combined

  4. Pour half of the flour mixture into the banana mixture and mix until no flour is visible. Then pour in the milk, stirring well.

  5. Add in the remaining half of the flour mixture and stir until just combined.

  6. Add in the rum-soaked cranberries, and the rum.

  7. pour into prepared muffin tin and bake at 350 for 25-35minutes (or until a toothpick inserted comes out clean).

  8. Cool on wire rack and serve.
