This is a good way to get rid of leftover meats (i.e. Chicken, shrimp, pork etc.) Very good and easy to make.

Recipe Ingredients for Dennis' Leftover Pancit

1 cup, chopped or diced Chicken, Meat Only, Roasted
16 large Shrimp, Mixed Species
0.75 cup Cooking Stock
1 medium (2-1/2" dia) Onions
3 carrot (7-1/2") Carrots
2 stalk, large (11"-12" long) Celery
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Green
1 tbsp Olive Oil
2 tbsp Soy Sauce
1/4 tsp Sea Salt
1 dash Pepper, Black
0.5 package Naturals Cellophane Noodles

Recipe Directions for Dennis' Leftover Pancit

  1. Prepare noodles as per package.

  2. Saute diced onion in oil.

  3. Add meat and cook for 3 minutes.

  4. Add the vegetables and cook for 3 minutes.

  5. Add the stock and season to taste.

  6. Add the prepared noodles, mix and cook for 3 minutes.

  7. Serve it up and enjoy.
