An easy and filling vegetable soup.

Recipe Ingredients for Denise's Vegetable Soup

1 medium raw Onion Yellow
1/2 cup, chopped Carrots
1/2 cup, chopped Kale
1/2 cup, diced Celery
4 oz Tomato Puree
1/2 cup Split Peas
1/2 cup Rice, Brown, Medium-grain
8 cup (8 fl oz) Water
2 tbsp Olive Oil
1/4 cup Lemon Juice

Recipe Directions for Denise's Vegetable Soup

  1. Chop veggies. (Or better yet, buy soup veggies already chopped.)

  2. Sautee lightly in olive oil.

  3. Add the soup pan along with water, tomato puree, lemon juice, brown rice, and split peas.

  4. Bring to boil.

  5. Lower heat, cover, and simmer for 50 minutes.
