lots of fresh organic greens and potato and mung beans make this delicious spicy soup. Add lemon juice at the end along with parsley/cilantro mix and adjust salt levels to taste.

Recipe Ingredients for Denise's Vegan Veggie soup

1 T olive oil
1 1/2 c mushrooms (including some shitake)
2 c leeks (half large or whole smaller one)
1/2 c carrots (half large one)
1/4 c garlic (4 large cloves)
1/2 c celery (one stalk)
3 oz beet leaves (one bunch washed & chopped)
1 T tamari soy sauce
1 1/2 quarts boiling water
11 oz. potato (two large)
1/2 c mung beans
1 T jalapeno (one pepper)
2 1/2 c kale, chopped
1 c tomato, chopped
4 oz cauliflower
2 T lemon juice
1 T parsley

Recipe Directions for Denise's Vegan Veggie soup

  1. saute the first 6 vegetables in the olive oil, add the tamari towards the end of the saute when they are limp. Add the rest of ingredients and pour the water over, cover and simmer until mung beans are soft & cooked.

  2. Add lemon juice at the end along with parsley/cilantro mix and adjust salt levels to taste.

  3. Can use tomato juice or V-8 instead of or in addition to water if you want more flavour.

  4. I use all organic ingredients
