1 baked potato
1/2 avocado
1 medium tomato
1/3 cup kidney beans

Recipe Directions for Deluxe Vegan Potato

  1. Bake potato

  2. Add seasonings of your choice (savory, thyme, garlic, rosemary, etc.) and mash into potato

  3. Mash avocado into potato and season again if you wish

  4. Top potato with 1/3 cup prepared beans (or 1 cup canned beans) and diced tomato.

  5. Serve with a salad or carrots sticks
