Not the healthiest food, but it'll hit the spot if you're craving something sweet and hearty in the fall, and deliver some good nutrients through the bananas. If you're looking to cut calories, reduce the sugar to 3/4 cup, the butter to 1/3 cup, cut out the molasses and use wheat flour.

Recipe Ingredients for Deluxe Banana Bread

1 cup sugar
1/2 cup butter
3 bananas, mashed
1/2 tsp cinnamon
1 pinch cloves, ground
1 pinch allspice, ground
1 tbsp. molasses
2 cups flour
1 tsp baking soda
1/2 tsp salt
1/4 tsp baking powder

Recipe Directions for Deluxe Banana Bread

  1. Preheat oven to 325. Cream the sugar and butter, then add the eggs and combine. Mash the bananas and add them in, as well as the spices and molasses, then mix well. Mix the dry ingredients together and add slowly, only mixing until the dry ingredients disappear into the wet. Add batter to a 8 or 9 inch greased loaf pan and bake for about 1 hour, or until a toothpick inserted 2" from the side comes out clean. The center of the bread may remain slightly undone, but by the time the center cooks the sides will burn and dry out!

  2. Serve with honey, Smart Balance butter or a powdered sugar glaze (if you're being naughty :)!
