Makes 8 servings



Sautesausage, onions and bell peppers in 1 T. oil. Add canned tomatoes and canned peas (drained). Stir and simmer for 5 minutes. Put in a 11x13 pan and mix cornbread mix with milk and egg and pour on top. Bake at 400 degrees for 30 minutes.

Recipe Ingredients for Delta Supper

14 oz. smoked sausage
14 oz. tomatoes
28 oz. blackeye peas
1 cup cornbread mix
1 T. oil
1 onion
2 bell peppers
2/3 cup fat free milk
1 egg

Recipe Directions for Delta Supper

  1. Saute sausage (cut in 1 inch pieces), bell peppers, and onions in oil.

  2. Stir in canned tomatoes and black eye peas (drained).

  3. Simmer for 5 minutes.

  4. Mix cornbread mix with egg and milk and pour on top of sausage mixture.

  5. Bake at 400 degrees for 30 minutes.
