Recipe Ingredients for Del's Favorite Muffin

1 1/2 cups wheat bran
1/2 cup prune juice
2 bananas,very ripe
1/2 cup raisins,seedless
3 tablespoons molasses
1 large egg,beaten
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

Recipe Directions for Del's Favorite Muffin

  1. *Add cinnamon or nutmeg to taste

  2. Heat oven to 400°. Lightly oil 12 standard-size muffin cups, or line them with paper liners. (*if you do not use all the cups, fill empties 1/2 full of water for even cooking)

  3. Combine wheat bran, prune juice, banana puree, raisins, molasses,egg, and vanilla in a large mixing bowl. Let stand for 10 minutes.

  4. Whisk together flour, baking powder, baking soda, and salt in a small bowl. Stir dry ingredients into the wet bran mixture just until dry ingredients are moistened. Do not overmix.

  5. Spoon batter into muffin cups, filling each about three-quarters full. Bake in the center of the oven for 20 minutes.

  6. Turn muffins out of the pan, and let them cool on a rack.
