A very easy make-ahead recipe. Low fat cheese can be used, but NOT fat free - does not melt well/bake at all. Great unexpected source of vitamin C.

Recipe Ingredients for Delmonico Potatoes

9 red potatoes, medium
1/2 c. fat free half and half
1 c. skim milk
8 oz. sharp cheddar cheese, grated
1/2 tsp. salt
1 tsp. dry mustard
1/4 tsp. ground black pepper
4 dashes nutmeg

Recipe Directions for Delmonico Potatoes

  1. Microwave potatoes until not quite done. Cool. Remove (but save) skin and grate into a 1.5 quart casserole. Chop skin and add. Do not stir.

  2. Combine half and half, mile, cheese, mustard, salt, pepper and nutmeg. Heat until cheese melts and pour mixture over potatoes. Do not stir. Bake at 325 degrees fro 50 minutes. May be made the day before and stored in fridge.
