12 oz Cilantro
2 cup Quinoa
2 lime yields Lime Juice
1 pepper Peppers, Jalapeno
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Green
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
1 medium (2-1/2" dia) Onions
4 serving Garlic Cloves
4 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
1 can (12 oz) yields Corn, Sweet, Yellow
1 cup Black Beans
0.5 tsp Salt, Table
3 tsp Cumin
6 tbsp Extra Virgin Olive Oil

Recipe Directions for Delish Quinoa Salsa Salad

  1. Boil 4 cups of water. Add in quinoa and bring to a simmer. Cover and simmer for ~15-20 minutes.

  2. Mix oil, salt and cumin.

  3. Mix all vegetables and herbs. Fold in quinoa and mix in oil.

  4. Enjoy!
