Healthy and delicious Greek style lentil salad with a twist!

Recipe Ingredients for Delish Lentil Salad

16 oz Lentil
1 medium Red Bell Pepper
2 tomato Tomatoes, Red, Ripe
1 large (8-1/4" long) Cucumber, Peeled
1 cup Spinach
4 oz Reduced Fat Feta Traditional Crumbled
4 serving Olive Oil
6 oz Balsamic Vinegar
1/2 tbsp Minced Garlic
1/4 tsp Sea Salt
1 tsp Pepper, Black

Recipe Directions for Delish Lentil Salad

  1. Prepare lentils and boil for about 15-20 min.

  2. Dice tomatoes, cucumber, bell pepper

  3. Chop spinach

  4. For the dressing: mix balsamic vinegar, olive oil, minced garlic, salt, and pepper.

  5. After lentils are tender, drain water, and let cool in refrigerator for about an hour.

  6. After lentils are chilled, add vegetables, and top with dressing, and feta cheese crumbles.

  7. Ready to serve!
