Easy and delicious minestrone soup

Recipe Ingredients for Delicous Minestrone Soup

2 zucchini
3 carrots
4 stalks of celery
2 leeks
1 medium onion
12 oz kidney beans
12 oz pinto beans
16 oz whole tomatoes
4 tbsp olive oil
4 cloves garlic
1/2 lb whole wheat pasta
1 salt and pepper to taste

Recipe Directions for Delicous Minestrone Soup

  1. Cut zucchini, carrots, celery, and leeks into half moons. Dice onions and tomatoes. Mince garlic.

  2. Put the vegetables in a large pot with both cans of beans.

  3. Add olive oil. Fill with water 1 inch above vegetable line.

  4. Bring everything to a boil.

  5. Reduce heat to low, stirring occasionally, until vegetables are tender.

  6. Add pasta, salt, and pepper.

  7. Allow pasta to cook fully and enjoy!
