Beautiful medley of veggies oin a casserole ..no need for meat or pasta..

Recipe Ingredients for delicious veggie casserole

2 medium Squash, Summer, Zucchini, Includes Skin
2 medium Carrots
5 stalk, medium (7-1/2" - 8" long) Celery
3 cup flowerets Broccoli, Flower Clusters
1 medium raw Bell Pepper Red
1 bowl Brown Rice Black-Eyed Peas and Veggies Bowl
2 oz Pasteurized Process Cheese Spread
1 cup Chicken Broth

Recipe Directions for delicious veggie casserole

Cut up all veggies into small soup size pieces .Sauteed veggies seperately until firm in olive oil.. first zucchini then put in casserole dish..large one..next carrots and celery then scater in dish ...layered on top on zucchini.. next sautee brocoli and 1 ounce of velvetta or your choice of cheese in with brocoli to melt..then add to pan..layering as before...then saute cabbage, and both colors of bell peppers...add to casserole pan...cook amy frozen entree in microwave...layer it over the casserole..add the other ounce of cheese broken in pieces over the caseerole.. add four tablespoons of prmesan cheese cover and bake for 25 mins on 400. remove let sit..It tastes even better after it sits in fridge for a coule of hours..it solidifies..Add your own fresh herbs if you like i use fresh cilantro and basil and i season as i sautee each veggie with salt n pepper.
