Really yummy and filling healthy sandwich.. you could also eat it on lettuce as a salad.

Recipe Ingredients for Delicious spicy and healthy vegetarian sandwich! (or salad)

1 pocket wheat pita pocket
1 burger Morningstar Spicy Black Bean Veggie Burger
2 tbsp Hummus
1/4 cup diced tomatoes and chilis (I use ro*tel)
1/2 cup chopped romaine lettuce
2 tbsp plain yogurt
1/2 cup cucumber

Recipe Directions for Delicious spicy and healthy vegetarian sandwich! (or salad)

  1. Cook veggie burger as it says on the package.. For this I just throw it in the microwave.

  2. After the burger is cooked, put it in the food processor with 2 tbsp of hummus and grind it up. Don't puree it or anything.. kind of chunky but pretty ground up.

  3. stir in some rotel tomatoes for added spice, texture and flavor.

  4. put this mixture in your pita pocket.

  5. You can eat it with or with out the sauce.. I personally think it's a little dry without any sauce so I blend about 2tbsp of plain yogurt with some cucumbers and make a cucumber sauce to pour on it or dip the sandwich.

  6. I add chopped romaine in the pita pocket after i pour the yogurt cucumber dressing in and.. eat it up!
