Seasoned roasted potatoes that are PERFECT!

Recipe Ingredients for Delicious Roasted Potatoes

3 lbs baby potatoes
3 red peppers
5 tbsp Olive Oil
3/4 tsp salt
3/4 tsp pepper
3/4 tsp paprika
3/4 tsp rosemary
3/4 tsp oregano

Recipe Directions for Delicious Roasted Potatoes

  1. 1) Preheat oven to 375. Lightly oil a rimmed baking sheet. Leave unpeeled baby potatoes whole. If using Yukon Gold, peel only if you wish, slice in half, then slice each half into quarters. Place in a large bowl. Core & seed peppers, thickly slice. Slice onion in half, and then slice into thick strips. Add peppers & onions to potatoes. Drizzle with olive oil and sprinkle with salt, pepper, paprika, oregano & rosemary leaves. Stir together until vegetables are evenly coated.

  2. Spread vegetables out on baking sheet. Roast in centre of preheated 375F oven, stirring once or twice, until vegetables are tender and potatoes are golden tinged, 50 to 60 minutes. Serve warm or at room temperature. Delicious with roast beef, pork or chicken.
