Best. Dinner. EVER! Serve with Pasta, or over more steamed broccoli. The easiest way to do the chicken is to use breasts left over from a previous meal.

Recipe Ingredients for Delicious Pasta Sauce

2 chicken breast, boneless, skinless
5 c cherry tomatoes, halved
2 cloves garlic, diced
5 olives, diced
2 c broccoli
1 c cauliflower
1 tbsp white wine vinegar

Recipe Directions for Delicious Pasta Sauce

Steam Broccoli and Cauliflower, put aside. Cook chicken breast (poaching is best), set aside to cool. Put broccoli and cauliflower in pot, add halved cherry tomatoes, garlic and olives. Allow to cook down until flavours start to blend (about 15 mins on med-low). Add chicken and white wine vinegar, as well as any other seasonings you desire. Continue to cook for another 15-20 mins over med-low heat, until thoroughly blended, and making your mouth water. Serve over pasta, or steamed veggies.
