carrot walnut oat coconut applesauce raisin muffin

Recipe Ingredients for delicious muffins

1 cup buttermilk
1 cup oats
1 cup spelt flour
1 tsp cinnamon
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda
1/2 cup brown sugar
1/2 cup applesauce
2 tbsp flax seed
1 tsp vanilla
1/2 cup milk
1 carrot
1/2 cup walnuts
1/2 cup unsweetened coconut
1/2 cup raisins

Recipe Directions for delicious muffins

  1. soak whole oats in buttermilk for 2 hours.

  2. oven 375

  3. mix wet, mix dry.

  4. stir in grated carrot, nuts, raisins, and coconut.

  5. greased tins 20 minutes

  6. (Top with whipped cream cheese - heavenly)
