Recipe Ingredients for Delicious, Low-Fat Chicken Enchiladas

40 oz chicken breasts
28 oz salsa, medium
28 oz can diced tomatoes, drained
3 cans cream of chicken soup, 98% fat free
5 tortillas, low carb wheat
1 cup Mexican blend cheese
2 cups iceberg lettuce, shredded
1 cup salsa, medium
1 1/2 cups sour cream, low fat

Recipe Directions for Delicious, Low-Fat Chicken Enchiladas

  1. Using a large stewing pot over medium-high heat, place 40 oz of thawed chicken breasts into the pot.

  2. Add salsa, tomatoes, and chicken soup.

  3. If you like a more spice, add chopped jalapeno peppers.

  4. Stir mixture and let come to a light boil.

  5. Reduce heat to low/simmer.

  6. Put lid on top of pot and cook for 90 minutes, stirring occasionally.

  7. After 90 minutes, check doneness of chicken. Chicken should shred easily with a fork. If it does not shred, cover again and continue cooking, checking every 15 minutes.

  8. Once chicken is shreddable, remove chicken one piece at a time, shaking off the sauce.

  9. Place chicken on a cutting board and shred the entire breast.

  10. Add shredded chicken back into the stew pot.

  11. Continue this until all chicken breasts have been shredded.

  12. Mixture should be thick once all the chicken has been shredded. Stir to be sure sauce and chicken are well combined.

  13. Turn off heat.

  14. Preheat oven to 375 degrees.

  15. Spray a 9x13 pan with cooking spray on bottom and sides.

  16. Take one tortilla and fill half of it with the chicken mixture.

  17. Fold over twice to seal meat inside the tortilla, then place tortilla in the pan with the seam side down.

  18. Continue this for all 5 tortillas.

  19. Top tortillas with cheese.

  20. Bake for 15-20 minutes, until tortillas feel crisp on top and cheese has melted and begins to brown.

  21. Remove from oven and let cool for 5 to 10 minutes so chicken mixture can "set".

  22. Slice all tortillas in half, creating 10 portions.

  23. Serve with iceberg lettuce, salsa, and sour cream.
