Recipe Ingredients for Delicious Gluten Free Vegetarian Casserole

300 grams corn pasta
0.66 cup cherry tomatoes
2 cup red swiss chard
2 cups kale
5 grams fresh basil
1 tablespoon fresh rosemary
1 tsp oregano
3 cloves garlic
1 tablespoon olive oil
1/2 cup soy milk
2 tsp arrowroot
1/2 tsp pepper
1 tsp salt
1 tablespoon tamari
1 small onion
1 egg
140 grams soy cheese

Recipe Directions for Delicious Gluten Free Vegetarian Casserole

  1. Freeze one bunch kale and one bunch red swiss chard overnight.

  2. Take kale and chard out, and rinse leaf by leaf. The leaves will become droopy as if they were lightly steamed.

  3. Remove the stems and chop into 1 inch strips.

  4. Saute the garlic and onions in the olive oil. Lower heat.

  5. Add the fresh chopped basil, rosemary and cherry tomatoes. Stir occasionally until wilted. Cover.

  6. Now boil 2 cups large Gluten-free Corn Pasta in separate pot.

  7. Next, add the kale and chard strips to the saute. Fold the pieces in slowly.

  8. Add the gluten-free tamari, oregano, salt and pepper to taste. Stir, cover, and let simmer.

  9. In a separate bowl, beat the soy milk, egg and arrowroot.

  10. Add the soy milk mixture to the other vegetables. Stir, cover, let simmer 10 minutes.

  11. Grate the soy cheese and have standing by.

  12. Drain the pasta when al dente.

  13. Add half of the pasta to a standard sized casserole dish. Layer in 1/4 of the soy cheese. Spread all the vegetables over this. Add the other half of the pasta.

  14. Gently stir the entire casserole dish until the layers are completely disrupted. Be careful not to stir too vigorously, or the corn pasta will disintegrate.

  15. Sprinkle the rest of the soy cheese over the dish.

  16. Place in the oven at BROIL for approximately 5 minutes, or until the edges of the pasta begin to crisp and the cheese has melted.
