Sweet yet tangy and oh, so good for you! I recommend extra sharp cheddar cheese and smoked chicken if you can find it. Roitessaire chicken from the grocers works great in this main meal salad. Golden raisins are wonderful in this dish but regular dark ones work too! Dried cranberries work perfectly too.

8 ounces lettuce
2 tablespoons raisins
2 ounces walnuts
1 cucumber
2 baby carrots
1 ounce cheddar cheese
4 ounces chicken breast
1 medium apple

  1. Chop up precooked chicken and veggies for this salad.

  2. Salad dressing of choice will add calories and fat to recipe. I like to mix a little rice wine vinegar with canola oil and a little sweetener.
