Recipe Ingredients for Delicious Chickpea Curry

2 cups chickpeas
1 onion, chopped
1 tsp ginger, grated
3 cloves garlic
28 ounce tomatoes, diced
1 head cauliflower, medium
3 cups fresh spinach
1/2 tsp salt
1/2 tsp red pepper flakes
2 1/2 tsp curry powder
1 tsp turmeric
1 tsp garam masala

Recipe Directions for Delicious Chickpea Curry

  1. Saute the onion in a small amount of water until tender, about 5 minutes. Add the garlic and ginger and cook about 1 minute. Stir in the salt, red pepper flakes, curry powder and turmeric - cook and stir for a couple of minutes.

  2. Add the tomatoes, with juice and simmer for about 10 minutes, stirring occasionally. You can add a little bit of sugar, if desired - about 1 tsp. Stir in the chickpeas, cauliflower, spinach and garam masala and simmer for another 10 minutes.

  3. Serve over brown rice.
