Making your own enchilda sauce is easy and fast- 2 ingredients and low sodium, no fat. The biggest calorie add in this recipe is the tortillas- choosing whole wheat and/or low carb are great options. I always select the lowest sodium varieties.

Recipe Ingredients for Delicious Chicken Enchiladas

6 dried poblano peppers
3 cups water
2 boneless, skinless chicken breast
1 1/4 cups low fat cheese
4 Whole Wheat Tortillas
2 tsp olive oil
2 cups chopped romaine lettuce
2 peppers
1 small chopped tomato
4 tbs low fat sour cream

Recipe Directions for Delicious Chicken Enchiladas

  1. Making the sauce:

  2. - seed and stem the dried peppers

  3. - simmer peppers w/ water for about 20 min

  4. (you can add chipolte peppers for additional flavor- I prefer the poblanos since they have a little mellow heat- but nothing fiery hot)

  5. - once peppers are soft, pulse in food processor or blender until you have a smooth sauce

  6. Assembling the enchiladas:

  7. - bake chicken breasts for 35 min in 375 degree oven w/ a little olive oil and fresh cracked pepper.

  8. - shred while still warm if possible- not necessary, but helps sauce sink in faster

  9. - add 1/3 to 1/2 of the enchilada sauce on the shredded chicken and stir thoroughly

  10. - use remaining oil to grease a small sized baking pan w/ olive oil- 8x8 works well

  11. - increase temp on oven to 425-450 to preheat

  12. - spread 2-3 tbs sauce on the bottom of the pan

  13. - add 1/4 of the chicken/sauce mixture per tortilla

  14. - sprinkle each with 1 TBS low fat cheese and roll into enchilda

  15. - place all 4 in pan as tightly as possible

  16. - spread remaining sauce on top of the tortillas, covering all surfaces

  17. - sprinkle remaining cheese on top of the sauce

  18. - add chopped fresh anaheim peppers to top of cheese

  19. - cover w/ aluminum foil and bake for 15-20 min

  20. - remove foil and bake for additional 10 min to brown cheese

  21. - serve w/ 1 tbs low fat sour cream and 1 cup chopped lettuce and sprinkle w/ seeded/chopped tomato

  22. You can also use chopped avocados, chopped, cliantro, fresh peppers, pickled jalepenos, or thinly sliced onions as garnish.
