This soup could be used for a high fibre diet, it is delicious and very filling.

Recipe Ingredients for Delicious Bean Soup

2 cups black beans
2 cups red kidney beans (cannned)
4 cups green beans (canned)
2 cups chickpeas (canned)
5 carrots (medium)
4 cups chicken broth (canned)
4 cups tomatoes (crushed)
5 celery stalks (medium)
2 cups parsnip (shredded)
4 cups water
2 green peppers
6 green onions

Recipe Directions for Delicious Bean Soup

  1. Chop all raw ingredients (carrots, celery, peppers, onions)

  2. Stir-fry them in PAM then cover and let them simmer in their own juice for 20 - 30 minutes.

  3. Add the rest of the ingredients, salt and pepper as you like and the water.

  4. Bring to a boil and then turn the heat down, let simmer for 1.5 to 2 hours.

  5. Enjoy!
