Banana muffins make a healthy snack for children after school. They are so easy to make and freeze well too.

Recipe Ingredients for Delicious Banana Muffins

200 g (7 oz) whole wheat flour
1/2 teaspoon baking powder
1 teaspoon bicarbonate of soda
1/2 teaspoon salt
3 large bananas, mashed
150 g (5 oz) caster sugar
1 egg
100 g applesauce

Recipe Directions for Delicious Banana Muffins

  1. Prep: 10 mins | Cook: 25 mins

  2. Preheat the oven to 180 C / Gas 4. Place 12 paper baking cases in a muffin tin.

  3. Sift together the flour, baking powder, bicarbonate of soda and salt; set aside.

  4. Combine mashed bananas, applesauce, egg and melted butter in a large bowl. Fold in flour mixture, and mix until smooth.

  5. Spoon evenly into baking cases in muffin tin.

  6. Bake in preheated oven for 25 to 30 minutes or until muffins spring back when lightly tapped.
