Recipe Ingredients for Delicious 4 point Pumpkin Pie

2/3 cup sugar
1 tablespoon corn starch
1 1/2 teaspoons cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon allspice
1/4 teaspoon salt
15 ounce can pumpkin
2 egg whites
2 tablespoons molasses
1 cup fat-free evaporated milk
1 pie crust

Recipe Directions for Delicious 4 point Pumpkin Pie

  1. Whisk together the sugar, cornstarch, cinnamon ginger, allspice, and salt in a large bowl. Add the pumpkin, egg whites molasses: whisk until well blended. Gradually add the evaporated milk, whisking until smooth. If not serving immediately, cover and freeze in an airtight container up to 1 month. Thaw overnight in the refrigerator, whisk until smooth.

  2. Preheat oven to 425. Pour the filling into the pie shell and bake for 15 minutes. Reduce the heat to 350; bake until knife inserted into center comes out clean, 35-40 minutes. Cool on rack for 2 hours. Serve at one or cover & refrigerate up to 1 day.
