Recipe Ingredients for Delicata Squash with Pears, Brown Sugar & Chili Powder

4 cups winter squash
4 bartlett pears
2 teaspoons olive oil
4 slices turkey bacon
1 tablespoon brown sugar
1 1/2 teaspoon chili powder
4 tablespoons golden raisins

Recipe Directions for Delicata Squash with Pears, Brown Sugar & Chili Powder

  1. Slice squash length-wise; scoop out seeds

  2. Slice again cross-wise approx. 1/4" wide

  3. Slice the pears length-wise and cross wise

  4. Place the squash and pears into a large bowl; add the olive oil and season with sea salt and pepper

  5. Bake on large cookie sheet for 30-35 minutes at 425 degrees

  6. Cook the bacon; drain; add 2 tablespoons water, the brown sugar, and chili powder; stir until combined

  7. Toss in the golden raisins

  8. Add the cooked squash and pears; toss

  9. Top with the crumbled bacon

  10. Serve hot
