A long time classic and traditional English family dessert. Extremely useful for when you've got too much bread in the pantry and have no idea how to use it up before it becomes a waste... Also, a quick note of my own to add about Bread and butter pudding; This recipe works at it's best when you use bread that is actually turning stale. The staler it is, the more flavour and less stodgey it will go in the oven. (in other words, it keeps it's shape, the staler it is, rather than turn into an eggy mush).

Recipe Ingredients for Delias Rich Bread and Butter Pudding

100 g butter
100 g sultanas
275 ml whole milk
120 ml double cream
100 g caster sugar
56 g lemon
6 eggs
2 tsp nutmeg
16 Serving Bread

Recipe Directions for Delias Rich Bread and Butter Pudding

  1. Butter the bread and cut each slice of buttered bread in half ? leaving the crusts on.

  2. Now arrange one layer of buttered bread over the base of the baking dish, sprinkle the candied peel and half the currants over, then cover with another layer of the bread slices and the remainder of the currants.

  3. Next, in a glass measuring jug, measure out the milk and add the double cream.

  4. Stir in the caster sugar and lemon zest, then whisk the eggs, first on their own in a small basin and then into the milk mixture.

  5. Pour the whole lot over the bread, sprinkle over some freshly grated nutmeg, and bake in the oven for 30-40 minutes.

  6. Always Serve warm.
