Recipe Ingredients for dee's stuffed peppers

16 ounces beef, chopped
16 ounces turkey, chopped
1 large onion
1/2 cup parsley
6 green peppers
1/2 cup rice
2 tsp salt
1/2 tsp pepper
2 tsp thyme
2 tsp oregano
16 ounces tomato sauce
1 cup beef broth
2 eggs

Recipe Directions for dee's stuffed peppers

combine turkey and beef, add chopped onion, rice, all spices and herbs, use hand mixing method to ensure even mixing. Add eggs and mix again. slice top of pepper 2/3 through and clean out insides, rinse. Fill pepper with meat mixture to top of pepper without pressing down, avoid pushing down on filling as pepper will get too full and become too dense to cook properly. Take a large stock put and pour in tomato sauce and beef broth, bring to a slow boil and arrange the peppers in the pot so that they fit snuggly, but not tight, can use a second row for one or two peppers on top if necessary. Spoon in a tbsp of tomato sauce inside each pepper and after they are all in the pot take a baster and make sure that the peppers have sauce on them. Cover and bring to a slow boil, then turn down heat to med low - low, slight simmer. They need at least an hour to cook and may need up to 2 hours. They are done when rice looks cooked.
