Low fat, cream (but no cream) broccoli soup. Made with fresh picked CSA broccoli. Yum.

Recipe Ingredients for Dee's Awesome Low fat Broccoli soup

4 pounds broccoli
12 stalk,+medium+7-1/2"+-+8"+long celery stalk
1 large sweet onion
2 tablespoons olive oil
60 oz chicken broth
1 1/2 cups water
1 teaspoon salt
1 pinch saffron

Recipe Directions for Dee's Awesome Low fat Broccoli soup

  1. chop all vegetables

  2. saute onion and celery in olive oil

  3. add broccoli, salt, saffron, broth and water

  4. bring to boil, then simmer until vegetables are tender

  5. cool slightly

  6. use hand blender to smooth consistency

  7. ready to serve

  8. alternative save 2-3 cups unchopped broccoli to add after blending
