Deer Stew Recipe

Very similar to beef stew without a lot of the fat.

Recipe Ingredients for Deer Stew

1 lb venison steak
1/4 cup all purpose flour
1 tbs ground cumin
1/4 tsp black pepper
1 tbs extra virgin olive oil
1 lb potatoes, red skinned, cubed
1 large onion, chopped
3 stalks celery, chopped
4 large carrots, chopped
4 cups reduced sodium beef broth 99% fat free
3 cups long grain rice, cooked

Recipe Directions for Deer Stew

  1. trim venison of silverskin and fat-cut into 1" cubes

  2. mix flour, cumin and pepper in ziploc bag, add venison and shake to coat meat

  3. heat oil in large stockpot over medium high heat

  4. remove meat from flour, shaking off excess, reserve flour

  5. add meat to heated oil and brown

  6. add onion, celery and carrots, cook 2 to 3 minutes until starting to brown

  7. add about 1/2 cup of broth, scrape bottom of pots to loosen browned bits-reserve about 1/2 cup of broth, add rest to meat and add potatoes

  8. cook over medium low heat about 30 minutes until potatoes and meat are done

  9. put reserved broth into a cup and add 3 tbs of reserved flour, whisk together until all lumps are gone-add quickly to stew and stir until completely mixed in

  10. cook until bubbly and thickened, serve with rice
