Wild Blueberries preferred. 9 1/2 inch deep dish (brown pan).

Recipe Ingredients for Deep Dish Blueberry Pie

2 2/3 c flour
10 T unsalted butter
6 T shortening
2 T sugar
1/2 t salt
8 T ice water
7 1/2 c frozen blueberries
1/2 c brown sugar
2 t cinnamon
7 T flour
2 T sugar

Recipe Directions for Deep Dish Blueberry Pie

In the food processor, combine the flour, sugar and salt. Pulse2 or 3 times to mix. Add cold butter and shortening pieces and pulse 8 to 10 times until mixture forms large coarse crumbs the size of large peas. Add the ice water a little at a time and pulse 10 to 12 times just until the dough begins to come together in a mass but does not form a ball. Transfer the dough to a work surface and shape the dough into 2 6-inch disks. Wrap tightly in plastic wrap and refrigerate until well chilled, about 1 hour or for up to overnight. Roll out one disk into a crust and line the pan with the crust. In a large bowl, combine the blueberries, brown sugar, cinnamon, sugar and 7 tablespoons of flour. Stir gently to coat the blueberries evenly. Let stand 45 minutes. Pour the filling into the crust spreading it evenly. Roll out second crust, make vent holes and drape over the top of the pie sealing and fluting the edges. Protect the edges with a pie ring, position rack in lower third of the oven, place pie pan on cookie sheet and bake at 375 degrees 60 to 90 minutes or until blueberry filling just begins to bubble.
