I said three servings, but really, it could be more, or less. The way I did it was I ate two lasagna noodles (40g) with about two tablespoons of the ricotta mixture in each, topped with the meat sauce.. I didn't take a lot of the meat, either.. but anyways, this is a really good tastey one. The calories are probably a little off, because it depends on the brands of things.. But yeah, this is really good.

Recipe Ingredients for Deebo's ghetto lasagna

200 g ground chicken
50 g onion
1 cup low-fat ricotta cheese
90 g firm tofu
100 g spinach
1 tsp garlic powder
2 tsp black pepper
1 tsp salt
100 g whole wheat lasagna noodles
3 cups tomato sauce
4 tbsp parmesan cheese

Recipe Directions for Deebo's ghetto lasagna

  1. boil lasagna noodles, drain, and set aside.

  2. brown chicken, and onions, once cooked add tomato sauce, and garlic, and heat throughly

  3. remove stems and steam spinach

  4. drain spinach very well, chop it finely, and mix with tofu, ricotta, and half the parmesan.

  5. Add salt, pepper to taste.

  6. Put layer of meat sauce in the bottom of a dish.

  7. Take a noodle and lay it flat

  8. spread ricotta mixture over noodle, leaving space at the end, and roll it up.

  9. Put noodle seam side down, and repeat with remaining noodles.

  10. Cover with sauce, and remaining parmesan.

  11. Pop into the oven until the cheese ontop is melted, and it's all bubbley and delicious.

  12. Let cool for for 5 minutes (or longer, I couldn't wait) and enjoy with good company!
