From Jessica Seinfeld's Deceptively Delicious. I skipped the 1/2 cup of veggie puree in favor of actual veggies.

Recipe Ingredients for Deceptively Delicious' Baked Egg Puffs (modified)

2 whole eggs
4 egg whites
1/3 cup fresh spinach
1/4 cup shredded cheddar cheese
1/3 cup diced mushrooms
2 tbsp flour
1/2 tsp baking powder
1/4 tsp salt

Recipe Directions for Deceptively Delicious' Baked Egg Puffs (modified)

  1. Preheat oven to 400 degrees

  2. Spray 4 ramekins with non-stick cooking spray

  3. Mix all ingredients together

  4. Pour even amounts into the ramekins

  5. Bake for 11-13 minutes or until no longer runny in the center
