Carrot Cake made in a skillet. Eat your spinach before or after your cake. The spinach brings the cake up to a guilt-free 'C' from a 'D+'!

Recipe Ingredients for Decadent Carrot Cake

2 cups flour, unbleached
1 cup honey,
1 cup brown sugar, packed
1 tsp salt
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp allspice
1/2 tsp nutmeg
1/2 cup raisins
1/2 cup walnuts, chopped
5 cups carrots, finely shredded
5 cups apples, diced
1 1/2 cups coconut oil
4 eggs, large
2 tsp vanilla extract
3 lbs spinach

Recipe Directions for Decadent Carrot Cake

  1. Place all dry ingredients in a large bowl and mix well, especially the brown sugar which will be lumpy.

  2. Add raisin and nuts, mix again.

  3. Add shredded carrots, mix again until evenly combined.

  4. Whisk eggs, coconut oil and vanilla together.

  5. Pour egg mixture over all and fold together for about 50 strokes until you have a smooth, well combined batter.

  6. Pour your batter into a 12" x 2" deep heavy skillet lined with parchment paper.

  7. Bake at 325 F for 50-60 minutes or until a knife inserted in the center of the cake comes out clean.

  8. Cool on a wire rack.

  9. Frost and fill with a mixture of cream cheese, confectioner's sugar and vanilla, if desired
