My favorite lasagna recipe minus the meat. If you want to add meat to the sauce, you can try ground turkey or a lean beef/italian sausage mix. Italian sausage makes the flavor better, but you can mix it with the ground turkey or lean beef for a lower fat combination.

Recipe Ingredients for Debbie's Veggie Lasagna

1 large onion
1 garlic clove
1/2 yellow pepper
1/2 red pepper
1 cup mushrooms
12 oz tomato sauce
4 oz. fat free ricotta cheese
1 egg
4 oz part skim mozzarella
2 tbsp olive oil
4 cups spinach

Recipe Directions for Debbie's Veggie Lasagna

  1. Boil lasagna noodles and set aside. Sautee onion, garlic (pressed or minced) peppers, mushrooms in olive oil. Once those ingredients are cooked to your satisfaction, process them in a food chopper, not too finely chopped, and return to the skillet. Add the sauce and simmer on low.

  2. Slightly beat the egg and add to the ricotta cheese. Mix and set aside. Layer the sauce, noodles, add ricotta mixture and spread over the noodles, mozzarella, spinach, and repeat. Finish with sauce and mozzarella. Bake at 350 for 45 minutes.

  3. NOTE: The lasagne noodles are not included in the nutirion info on this recipe, so read your label and adjust accordingly. ENJOY!
