This was a result of a recipe for scalloped potatoes I messed up. It ended up tasty and yummy!

Recipe Ingredients for Debbie's Messed Up Surprise Potatoes

3 lbs potatoes, peeled
3/4 c sundried tomatoes, chopped
1 c parmesian cheese, shredded and divided
1 c milk
1 tbsp butter, divided
2 garlic cloves, diced
1/2 tsp salt
1/2 tsp pepper

Recipe Directions for Debbie's Messed Up Surprise Potatoes

  1. Peel potatoes and slice into 1/4 " slices. Boil for 15 minutes in large pot. Drain and cool.

  2. Mix together with milk, 1/2 of butter, salt, pepper, and 2/3 of margarine. When fluffy, stir in sun dried tomatoes.

  3. Put in 13 x 9 casserole dish. Top with remaining parmesian. Brown in oven at 350* for 15 minutes. Serve.
