Recipe Ingredients for Debbie's Chunky Beef Barley Soup

1 1/2 pound beef,cubed
2 garlic cloves, crushed
4 cups broth,beef
14 ounce diced tomatoes
1/2 cups onion, chopped
1 tsp basil
1/4 tsp pepper
1 cup corn
1/4 cup flour
3 tbsp canola oil
2 cups water
1 cup carrots, diced
1/2 cup celery, thinly sliced
1 tsp salt
2/3 cup barley

Recipe Directions for Debbie's Chunky Beef Barley Soup

Dredge the cubed meat in flour. Brown meat with garlic and onions in hot oil in 4 quart dutch oven over medium-high heat. Once browned, add broth and enough water to make 6 cups liquid. Add tomatoes,celerey,barley,salt,basil and pepper. Bring to a boil, then simmer for 30 minutes. Add carrots and corn and continue to simmer for approx. 45 more minutes, or until carrot is tender. You can additional water to this soup if it becomes too thick after standing.
