Debbie's Chicken & rice with tomato and onion

Recipe Ingredients for Debbie's Chicken & rice with tomato and onion

1 cup rice
2 chicken breast
1 onion
1 tomato
2 tbsp. olive oil

Recipe Directions for Debbie's Chicken & rice with tomato and onion

  1. Cook rice as directed.

  2. heat onions in olive oil while slicing chicken into 1/2 inch slices. Add chicken to pan and cook until 3/4 done. Season as desired. Cover and simmer until rice is done. Add tomatoes and cover. Remove rice from heat and let all stand for 5 minutes. Serve chicken over rice.
