I played with the flavour of these by topping with cinnamon and brown sugar rather than the maple glaze. Yummy. Need a nice tall glass of milk with them though!

Recipe Ingredients for DD Mini Donuts - Cinnamon Version

1 cup coconut flour
1 tsp baking soda
1/4 tsp salt
2 egg
4 egg whites
4 tbsp honey
1 tsp vanilla extract
4 tbsp unsweetened applesauce
1 cup vanilla almond breeze
10 stevia
3/4 tsp cinnamon
3 tbsp brown sugar

Recipe Directions for DD Mini Donuts - Cinnamon Version

  1. Preheat oven to 350, spray pans with pam (unless you are using silicone).

  2. Mix first dry ingredients.

  3. In a separate bowl, mix wet ingredients.

  4. Add wet ingredients to the dry ingredients and mix until there are no more lumps.

  5. Pour into pans and bake for 15 minutes for mini muffin pans and 20-25 minutes for bigger muffins or donut forms.

  6. Bake until toothpick comes out clean and muffins are set.

  7. Mix last three ingredients for topping and dip the muffins in as soon as they are cool enough to remove from the pan. I packed a little of the topping on the tops just to make sure they had enough.

  8. Try not to eat them all in one session!
