Homemade Spicy Chicken Enchiladas

Recipe Ingredients for Dawn's Spicy Chicken Enchiladas

1 pound skinless, boneless chicken breasts
1 small onion, diced
1 tomato, diced
1 pepper Jalapeno
2 cup Old El Paso Sauce Enchilada Hot
6 serving Hot Restaurant Sauce Components
1 tsp garlic powder
1 tsp hot chili powder
1 tsp cumin
1 tsp onion powder
9 serving Mission Carb Balance Flour Tortillas, Medium
2 inch+cube Chihuahua Cheese
1/2 cup Cheese

Recipe Directions for Dawn's Spicy Chicken Enchiladas

  1. Boil Chicken, then cool and shred

  2. Warm Chicken, Onion, Tomato, Taco Sauce, Spices, and Jalapeno until heated through and onions are cooked

  3. Coat bottom of pan with 1 tbsp enchilada sauce

  4. Coat each tortilla with 1 Tbsp sauce, then add 1/2 cup chicken filling, top w/ 1 tbsp Mexican cheese, Roll and place seam side down in pan.

  5. Top with remaining 1 cup sauce

  6. bake, uncovered @ 350 for 20-25 minutes

  7. top with chihuahua cheese and bake additional 5-10 minutes or until cheese is melted.

  8. Top w/ chopped scallions, if desired

  9. serve warm
