Tasty Asian soup that will warm you up from the inside

Recipe Ingredients for Dawn's Hot & Sour Soup

4 serving Chicken Broth
4 oz Fresh Boneless Skinless Chicken Breasts
5 pieces Dried Shiitake Mushrooms
8 oz Firm Tofu
3 oz Bamboo Shoots
0.25 oz Corn Starch
6 oz Regular Soy Sauce
6 oz Vinegar Wine White
3 serving Garlic Chili Pepper Sauce
1 medium Egg, Whole
1 medium (4-1/8" long) Onions, Spring Or Scallions

Recipe Directions for Dawn's Hot & Sour Soup

  1. Soak dried shiitake mushrooms in 8 ounces hot water for 30 minutes.

  2. Remove hard stem and slice mushroom caps into thin strips. reserve the liquid they were soaking in.

  3. Slice chicken breast into very thin strips about 1 inch long.

  4. Heat chicken broth and mushroom liquid in soup pot.

  5. Add sliced chicken and simmer until cooked..about 5 minutes.

  6. Add sliced mushrooms.

  7. Cut tofu into 1/2 inch cubes and add to broth.

  8. Add sliced bamboo shoots.

  9. Dissolve the 1 Tbsp. of corn starch in 2 ounces of cold water and stir into soup. Soup should start to thicken slightly.

  10. Combine soy sauce, vinegar and garlic chili sauce in small bowl. Add about 1/2 of this mixture and taste. More can be added to enhance flavor.

  11. When soup has been seasoned to taste, crack and beat an egg in a small bowl. While stirring, add beaten egg to soup. Taste again and make adjustments as needed. (You can add more soy sauce, vinegar or garlic-chili sauce or all three. You can also add a bit of grated ginger for extra flavor.)

  12. Serve with fresh sliced green onions on top.
