Recipe Ingredients for Dawn's half meat/half veggie lasagna

3/4 lbs lasagna noodles, uncooked
2 links italian sausage, mild, cooked
2 links italian sausage, hot, cooked
2/3 lb ground beef, cooked
1 cup eggplant, oven roasted
1 cup zucchini, oven roasted
1 poblano pepper, oven roasted
3 cups cheese, italian style blend, shredded
1 cup mushrooms, fresh sliced
1 cup large curd cottage cheese
1 tbsp olive oil
3 cups sauce, pasta
1/2 cup onion, diced

Recipe Directions for Dawn's half meat/half veggie lasagna

Saute the meats until no longer pink with onion in nonstick pan (remove italian sausage from casing and crumble). Mix 1.5 cups pasta sauce with drained meats and heat to warm. Oven roast the veggies at 350 for 10 mins, until soft. Remove skin from pepper and discard. Cut roasted veggies into strips. Line 9x13 baking dish with parchment paper and spread 1/4 cup prepared pasta sauce in bottom of dish. Cover with uncooked lasagna noodles. Layer roasted veggies and 3/4 cups pasta sauce on noodles. Add 1 cup italian style shredded cheese. Cover with lasagna noodles. Cover with meat and sauce mixture, add 1 cup italian cheese. Cover with lasagna noodles. Spread remaining pasta sauce over noodles, adding cottage cheese and remaining shredding cheese to top. Cover with heavy-duty aluminum foil and bake in 350 oven for 60 mins. Remove from oven and allow to rest for 5 mins before cutting.
