Red beans and rice using coconut milk instead of butter

Recipe Ingredients for David's red beans and rice

1 cup Rice, White, Long-grain, Regular, dry
1/3 cup Beans, Kidney, Red, Mature Seeds, cooked
2 1/2 tbsp Coconut Milk
2 cup water
1/2 tsp kosher salt

Recipe Directions for David's red beans and rice

  1. Combine rice, salt, water and coconut milk.

  2. Bring to a boil, on medium high.

  3. Reduce heat to medium low and let simmer until water reaches top of rice.

  4. Reduce heat to lowest setting and cover, let steam for 12 minutes.

  5. Remove from heat, uncover (careful with steam).

  6. Fluff with fork.

  7. Add cooked red beans and fold together.

  8. Enjoy! Top with chopped cilantro or parsley if desired.
