This is a basic tomatoe soup I've made in the past using left over tomatoes from the garden. Canned tomatoes may be used instead of fresh ones. Soup can be modified using other vegetables; (leftovers).

Recipe Ingredients for Dave's Old Fashioned Tomatoe Soup

12 medium fresh tomatoes, remove skins and cut up
1 cup celery, chopped
1 medium onion, chopped
4 tablespoons olive oil
4 tablespoons garlic powder (granulated)
32 ounces beef broth, ( I used 1 - 32 ounce box of Great Value beef broth)
4 tablespoons Taco Sauce, ( I used Old El Paso Medium taco sauce)
2 cups water
1 salt and pepper to taste

Recipe Directions for Dave's Old Fashioned Tomatoe Soup

  1. In a large stock pot add olive oil, celery, onion, and garlic powder and cook vegetables until clear.

  2. Remove skins from tomatoes, cut up, and add to stock pot.

  3. Add beef broth, may use chicken broth or what ever you have on hand. A lower sodium broth is better for this recipie.

  4. Add taco sauce, water, and salt and pepper (if using) to taste.

  5. Simmer on low heat for 2 - 3 hours.
