Recipe Ingredients for Dave's Ginger Cake

4 ounces fresh ginger
1 cup molasses
1 cup sugar
1 cup peanut oil
2 1/2 cups flour
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground black pepper
1 cup water
2 teaspoons baking soda
2 eggs

Recipe Directions for Dave's Ginger Cake

  1. preheat oven to 350 degrees

  2. mix the molasses, oil, and sugar in one bowl

  3. sift together the flour and spices together in another bowl

  4. bring the water to a boil in a saucepan, stir in the baking soda, and then mix the hot water into the molasses mixture

  5. whisk the dry ingredients into the batter

  6. add the eggs and mix until everything is thoroughly combined

  7. pour into a 9 1/2 springform cake pan lined on the bottom with parchment paper

  8. bake for 40 minutes-1 hour

  9. let cool for at least 30 minutes before removing it from pan

  10. peel off parchment paper and place on cake plate
