These are simple muffins. You can substitute any nuts and fruits you like.

Recipe Ingredients for date and walnut muffins

13 dates
1/2 cup walnuts
1 1/2 cups whole wheat flour
1 1/2 cups organic brown sugar
1 teaspoon salt
2 teaspoons baking powder
3/4 cup soy milk or water
1/4 cup canola oil

Recipe Directions for date and walnut muffins

  1. Preheat oven to 400 Fahrenheit.

  2. Now combine flour, sugar, salt, and baking powder together in a mixing bowl.

  3. Add soy milk and or water and oil. Mix together.

  4. Place baking cups in a muffin pan, pour mix into baking cups or just spray your muffin pan with cooking spray and pour into the pan like I do and bake for 25 to 30 minutes.

  5. How many you make depends on how big your pan is and how much is poured into each muffin.
