Recipe Ingredients for Date Nut Muffins

1 cup Pitted Dates
2 large Egg, White
1 tbsp Vegetable Oil, Canola
0.06 cup Pure Maple Syrup
1 tbsp Molasses, Blackstrap
0.13 cup dry Wheat Bran, Unprocessed (Millers Bran)
1.75 cup Whole Wheat Flour
0.25 cup Wheat Germ, Toasted, Plain
4 tbsp Flax Seed
0.13 cup Oat Bran
0.5 cup Chopped Walnuts
0.5 cup Apple Sauce Unsweetened Organics

Recipe Directions for Date Nut Muffins

Soak dates in 1c boiling water with 1t baking soda in it. Mix wet ingredients and stir in wheat bran and date mixture. Mix dry ingredients with 1t baking powder. Stir wet and dry together just until moistened. Add chopped nuts. Makes 12 muffins. Bake at 400 for about 20 min.
