Dates, nuts, whole grain...very filling muffin.

Recipe Ingredients for Date Nut Muffins

1 1/2 cup spelt flour
2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp salt
2 eggs
1/2 cup brown sugar
1 1/2 tbsp molasses
1 tsp vanilla
1/4 cup canola oil
1 tbsp canola oil
2/3 cup applesauce
1/2 cup buttermilk
1 cup chopped pitted dates
1/4 cup chopped crystallized ginger
2/3 cup chopped walnuts

Recipe Directions for Date Nut Muffins

  1. Preheat oven to 400.

  2. Prepare muffin pan.

  3. Mix dry ingredients. (not the brown sugar)

  4. Blend wet ingredients, including eggs and brown sugar. Blend till sugar is dissolved.

  5. Fold in Dates, Nuts and Ginger.

  6. Spoon into prepared pan.

  7. Bake 15-17 minutes. Allow to cool a minute or two before removing to cooling rack.
