The darker side of blueberry white chocolate bundt :) Since dates are naturally so sweet, these are not tossed with as much sugar, but extra spices have been added.

Recipe Ingredients for Date-Nut Chocolate Bundt

1 1/2 c. sugar, divided
3 eggs
3/4 c. butter, 2 tsp vanilla
1 tsp. cinnamon
1/2 tsp. allspice
1/4 tsp. nutmeg
8 oz. semi sweet chocolate, chopped
1/2 c. walnuts, toasted & chopped
1 c. dates, chopped
1 1/2 c. lowfat plain yogurt
1 c. whole wheat pastry flour
1 1/3 c. cake flour
1/3 c. wheat germ
3/4 tsp. baking soda
1 1/2 tsp. baking powder
1/8 tsp. salt

Recipe Directions for Date-Nut Chocolate Bundt

  1. Filling: Combine spices, 1/4 c. sugar and chocolate; stir to coat. Add chopped dates, set aside.

  2. Cake: Cream butter & 1 1/4 c. sugar w/ vanilla, add eggs, then alternate dry ingred. w/ yogurt. Fold in walnuts. Layer in GREASED & FLOURED Bundt pan with spiced chocolate-date mixture in center.

  3. Bake 350*F 30-45 minutes, until toothpick comes clean. Cool 10 min on wire rack, loosen edges & cool 30 minutes, invert onto rack. Cover tightly, keeps 3-4 days at room temperature, can be frozen.
